No Bake Cheesecake with Cranberry Mint Sauce

‘Tis the season to indulge! This no bake cheesecake recipe combines the creamy texture of a classic cheesecake with fresh, bursting cranberry flavor akin to the holidays.

Ingredients

Directions

  1. In a small bowl, stir together the graham cracker crumbs, brown sugar and cinnamon. Add melted butter and mix well. Press into the bottom of an 8″ or 10″ springform pan. Chill until firm.
  2. In a medium bowl, beat together the cream cheese and lemon juice until soft. Add whipping cream and beat with an electric mixer until batter becomes thick. Add the sugar and continue to beat until stiff. Pour into chilled crust, and top with pie filling. Chill several hours or overnight. Just before serving, remove the sides of the springform pan and top with cranberry mint sauce.

  • 1 sweet onion, finely diced (Vidalia or Walla Walla sweet onions recommended)
  • 1 green pepper, chopped

  • salt and pepper to taste

Instructions

  1. In a medium bowl, gently toss avocados, onion, bell pepper, tomato, cilantro and lime juice until evenly coated.

Instructions

  1. Combine almond milk, chia, peanut butter and maple syrup in a sealable jar or bowl and stir to blend flavors.

  • 1/2 cup peanut butter

  • 1/3 cup honey

  • 1 teaspoon vanilla extract

  • 1 tablespoon chia seeds

  • 1/2 cup chocolate chips

Instructions


  1. Stir all wet ingredients together in a medium bowl until thoroughly mixed.

  2. Add dry ingredients, saving the oats for last.

Instructions


  1. In a bowl, whisk balsamic vinegar, sugar and black pepper until blended.

  2. Add strawberries and stir to coat; marinate in your refrigerator until chilled, about 10 minutes (or only 5 minutes if you have a Marvel Refrigerator).

4 large vine-ripened tomatoes, peeled and diced
1/2 English cucumber, diced
1/2 cup diced red bell pepper
1/4 cup minced green onion
1 large jalapeno, seeded and minced
2 cloves minced garlic
1 teaspoon salt
1/2 teaspoon ground cumin
pinch dried oregano
cayenne to taste
freshly ground black pepper to taste
1 pint “Sweet 100” cherry tomatoes
1 lime, juiced, or to taste
1 teaspoon Worcestershire sauce
1 tablespoon balsamic vinegar
1/4 cup extra-virgin olive oil
chiffonade of fresh basil leaves or cilantro

Directions

  1. Combine diced tomatoes, cucumber, bell pepper, green onion, jalapeno, and garlic in a large bowl. Stir in salt, cumin, oregano, cayenne pepper, and black pepper.
  2. Place cherry tomatoes, olive oil, lime juice, balsamic vinegar, and Worcestershire sauce in a blender. Cover and puree until smooth. Pour pureed mixture through a strainer into the tomato-cucumber mixture; stir to combine.
  3. Place 1/3 of the tomato mixture into the blender. Cover, turn blender on, and puree until smooth. Return pureed mixture to the remaining tomato-cucumber mixture. Stir to combine. Cover and chill in refrigerator for 2 hours.
  4. Season cold soup with salt and black pepper to taste. Ladle into bowls and top with basil.
